The Durham Bulls are one of Minor League Baseball’s most recognized and successful franchises. DBAP hosts professional baseball games, collegiate events, concerts, festivals, and community gatherings throughout the year. The Concessions Manager plays a vital role in delivering the memorable food and beverage experience that enhances every event.

Position Summary

The Concessions Manager is responsible for directing all concessions operations at Durham Bulls Athletic Park (DBAP), ensuring an exceptional guest experience while delivering strong financial and operational performance. This role oversees all food and beverage concession outlets, including permanent stands, portable locations, subcontractors, and specialty promotions during games and special events.

The ideal candidate is an experienced food and beverage leader with a strong operational mindset, capable of managing high-volume event environments while developing teams and driving profitability.

This position reports to the Director of Food & Beverage.

Key Responsibilities:

Leadership & Team Development

  • Lead, coach, and develop Supervisors, and seasonal team members.
  • Manage hiring, onboarding, training, scheduling, and performance management.
  • Conduct pre-shift meetings and daily team briefings.
  • Implement progressive coaching and disciplinary procedures in partnership with HR.
  • Promote a culture of accountability, professionalism, and guest-first service.
  • Identify and develop future leaders within the operation.

Operations Management

  • Direct all aspects of concessions operations across multiple outlets.
  • Ensure all concession stands and portable locations are fully stocked, staffed, and event-ready.
  • Execute operational plans to meet projected attendance and demand.
  • Oversee food production sheets to ensure accurate production and minimal waste.
  • Conduct event-day facility walks and troubleshoot operational challenges in real time.
  • Ensure all menus, product offerings, packaging, and pricing are executed as designed.
  • Coordinate equipment maintenance, including fryers, grills, coolers, and beer systems.
  • Ensure all POS systems are updated, maintained, and functioning properly.

Financial Performance & Controls

  • Manage operational budgets and assist in developing annual financial plans.
  • Monitor and manage monthly P&L statements.
  • Drive revenue growth through strategic promotions and upselling initiatives.
  • Ensure accurate cash handling procedures and reconciliation processes.
  • Oversee inventory management, including:
  • Monthly physical inventories
  • Product transfers and requisition tracking
  • Beverage wastage reporting
  • Theoretical margin analysis
  • Control labor and operating costs within budgeted guidelines.

Guest Experience

  • Ensure high standards of hospitality and service at all concession locations.
  • Respond promptly and professionally to guest concerns and service issues.
  • Collaborate with marketing and operations teams to implement promotions and specialty events.
  • Maintain clean, visually appealing concession areas and displays.

Compliance & Safety

  • Ensure full compliance with federal, state, and local health regulations.
  • Maintain all safety and sanitation standards (ServSafe guidelines).
  • Enforce responsible alcohol service policies and complete required incident reporting.
  • Conduct monthly safety training sessions.
  • Maintain strong working relationships with local health officials.
  • Ensure all required alcohol service signage and protocols are in place.

Client & Vendor Relations

  • Work closely with vendors, distributors, and subcontractors to ensure product availability and service excellence.
  • Collaborate with internal departments including Ticketing, Marketing, Operations, and Human Resources.
  • Communicate operational updates and financial performance to senior leadership.

Qualifications

Education & Experience

  • Bachelor’s degree in Hospitality, Business, or related field preferred.
  • 5+ years of management experience in high-volume food and beverage operations.
  • Experience in a sports, entertainment, or event venue environment strongly preferred.
  • Multi-unit concessions experience preferred.

Certifications

  • ServSafe Certification required.

Skills & Abilities

  • Strong leadership and team development skills.
  • Excellent written and verbal communication abilities.
  • Proven ability to manage multiple priorities in a fast-paced, event-driven environment.
  • Strong financial acumen and understanding of P&L management.
  • Proficiencyin POS systems and Microsoft Office (Excel, Word, Outlook).
  • Ability to work extended hours, including nights, weekends, and holidays.
  • Strong problem-solving and decision-making skills.

Work Environment

  • Event-based schedule aligned with DurhamBullshome games andspecial events.
  • Requires standing for extended periods and walking throughout the facility.
  • Exposure to varying weather conditions (heat, cold, rain).
